This is a solid S meal and oh so yummy! Also you can freeze any extra loafs you might have for another time. Or make ahead of time and freeze for a quick and easy meal later.

 
Mini meatloafs, cauliflower mash, side salad.

{Meatloaf}
2 pounds ground beef
2 eggs
Red bell pepper chopped finely
Half an onion chopped finely
1T Worcestershire
1T soy sauce
1/2 (ish) pkg 1/3 Cream cheese
3/4 -1 c old fashioned oats
Salt & pepper to taste
1 small can tomato paste

1:Mix together
2:Line bottom of mini loaf pan
3:Put small piece of cream cheese in the middle of each loaf.
4:Use remaining mixture to cover cream cheese. Push down slightly to make sure cheese stays put.
5: Spread a little tomato paste over the loafs

Bake at 350 for 30-40 min. Enjoy!

  1. Sounds delicious! I\’ve never seen a recipe with cream cheese in meatloaf but it sounds fantastic. I am always looking for new recipes so this will have to go into the list of things to try.
