Hearty Potato Salad For Dad

Fathers day is coming up and plans are being made for pot lucks and BBQ’s. It’s a great time to be surrounded by family and eat good food. My husband loves potato salad. Normally I just buy one of those tubs of salad or I’ll pick something up from the deli. But this time I decided to make my own. I received some samples of “Just Mayo” products and wanted to try and come up with a recipe that my family would love. Below is what I came up with. Hearty Potato Salad

  • 6-7 large white potatoes cubed
  • 1/2 cup Just Mayo Awesome sauce Mayonnaise
  • 1/2 cup dijon mustard
  • 1/4 cup chopped green onion
  • 1/2 cup chopped celery
  • 1 large dill pickle chopped
  • salt and pepper to taste

Boil potatoes until soft. About 10 mins on high boil. Drain water from potatoes. Place potatoes in a large bowl and allow to cool. Once cool add all other ingredients to potatoes. Mix well. Chill salad until ready to serve.

Tip: You can add or take out the amount of mayo and mustard to your tastes and how dry you like your salad.
Tip: With this kind of potato the skin is super thin. You don’t need to peel the potato unless you want to.
